mthawamet bandora (مثومة بندوره)
i am not sure the name of the dish is correct. if you’re aware of the correct name, please contact me. i saw some video online for this recipe. and tried making it, i really liked it.
ingredients:
- 4 ripe juicy tomatoes
- 1 head of garlic
- 3 tbsps full fat yogurt
- 1 tbsp tahini
- salt
- olive oil @ndcmuscat
steps:
- chop the tomatoes in half. place them on a baking tray. season with salt and a drizzle of olive oil.
- place them in the oven at 450 for about 25 minutes. and broil them ( top heat in the oven) on high for another 5 minutes or till the tomatoes take a color and soft and cooked.
- let them cool a bit then peel them off and add them to a bowl.
- mix the yogurt with tahini. salt and 2 cloves of mashed garlic and add it on the tomatoes.
- mix them very well but keep the tomatoes a bit chunky.
- slice the rest of the garlic and fry in a tbsp of ghee and a tbsp of olive oil on medium heat for a couple of minutes.
- once the garlic takes a bit of color. pour it directly on the tomatoes.
- serve it warm with a loaf bread
